Big Flavours, Local Roots: Meet James Edwards – The Ormond’s New Head Chef.

The Ormond at Tetbury is entering a delicious new chapter with the arrival of acclaimed Cotswold chef, James Edwards. Known for his bold flavours, deep commitment to local produce, and elegant-yet-approachable style, James brings with him a fresh culinary direction that’s set to make Bistro-23 at The Ormond a go-to for everything from a relaxed weekday lunch to memorable celebrations. Think intensely flavoured, seasonal dishes – rooted in the Cotswolds but inspired by global ideas.

James brings a remarkable culinary pedigree to Bistro-23, having trained under Michael Caines, worked for Gordon Ramsay at W8, Tom Kerridge at The Hand and Flowers, and most recently, the Kings Head Hotel in Cirencester as Executive Chef.

 

His signature style; ingredient-led, bold, and rooted in seasonal British cooking—makes him a natural fit for The Ormond’s warm, community-led approach to hospitality. Signature dishes will include a delicate pan seared halibut with Jersey royals, wild samphire and caper beurre noisette; and a hearty duck breast with a crispy duck croquette (bonbon), baby turnips, potato terrine and plum jus. These modern British dishes feature bold flavour pairings and locally-sourced Cotswold ingredients wherever possible.

We’re very excited to be launching a three course prix fixe lunch menu, Monday through Saturday.

For just £21.95 you’ll enjoy a starter, main and dessert (and the option to add Cotswold cheese for a supplement). We’ve designed it to showcase the best of what’s in season right now – for example, a summer menu might feature asparagus tortelloni or wild mushroom fricassee starters. Guests can then choose a main such as a locally-reared lamb shank or pan-fried hake with pea purée. To finish, expect classics with a twist – like elderflower pannacotta or mini sticky toffee pudding. In short, it’s great value for an elegant
meal. We’re really proud of the variety and quality, and we think the £21.95 price point will surprise and delight our guests.

Whether it’s a wedding anniversary, corporate dinner or birthday, we’ll design courses to match your tastes, and even arrange pairings with local Cotswold wines and ales with an emphasis is on local touch: local cheeses on the cheese board, wines from Cotswolds vineyards, and flavours that reflect the Cotswold season. we can even make the entire Bistro-23 or bar area exclusively yours –. The end result is a party that feels completely unique.
